Thai Melon - This melon originates from Thailand. The green and yellow flesh is similar to cantaloupe. After you buy one, take home and place on your counter until the fruit begins to soften. Then refrigerate and eat. Some customers like to sweeten up the melon by adding powdered sugar or honey.

Opo is our Asian squash. We have a good supply from June through November each year.

Recipe for cooking Opo

Stir fried opo.

Opo wash and peel, then cut to desire size.

One pound of chicken cut to small cube.

Small onion cut to small pieces.

Saute onion with vegetable oil then add chicken stir for 5 minutes.

Add squash and desired spices (salt, pepper, basil, cilantro) cook uncovered for 5 -10 minutes stirring often. Squash should be soft and juicy at this time.

Serve.

You can also replace chiken with bacon.



Bake opo.

One opo, peel and cut to small pieces.

1 small bag of bread crumb.

1 small onion cut to small pieces.

I cup of mozzarella cheese (shredded)

1 teaspoon of salt.

Black pepper.

In a baking dish spread opo evenly, saute onion with vegetable oil

add salt and pepper add on top of opo, then spread bread cumb over

and then add mozzarella cheese on top, cover with foil bake for 30 to

40 minutes.

Serve.

 

Stuffed opo.

1 large opo wash then cut to half scoop all the inside.

1 table spoon butter

1 table spoon olive oil

½ cup chopped onion

½ cup chopped celery

1 diced tomatoes

1 clove garlic crushed

1 teaspoon dried oregano

½ teaspoon dried basil leaf

2 taspoon salt

½ steaspoon black pepper

1 egg, slightly beaten

1 ½ teaspoon worcesterhire sauce

1 ½ pounds lean ground beef

1 ½ cups cooked rice

¾ cup of shredded cheddar cheese

chop edible part of tops and set aside.

Heat olive oil and butter in a large skillet over medium heat saute onion pepper, chopped onion, chopped celery for about 5 minutesuntil vegetable are tender. Add tomatoes, garlic oregano, basil, 1 teaspoon salt, add ¼ teaspoon of pepper. Simmer for about 10 minutes.

In a large mix bowl, combine egg with remaining salt and ¼ teaspoon pepper. Gently stir to blend, add ground beef, cooked rice and mix well, stuff opo with meat mixture and place in a baking dish. Bake at 350 degree for 55 to 65 minutes. If desire top opo with shreded cheddar cheese just before opo are done, bake until sheese is melted.

Serve.

Grilled Egg plant

Three egg plant wash then slices 1/2 an inch thick, grill until cook, in a sauté pan 3 table spoons olive oil or veg. oil, add 1 small onion chopped, add 1 cloves of garlic smash to small pieces, couple dashes of dried basil or fresh basil, cook for couple minutes, then add 1 teaspoon of salt, couple dashes of black pepper, spread over the grilled egg plant, serve.

Asian style eggplant

First wash 3 egg plants then cut to 4 slices lengthwise, put them in the steamer, steam for 30 minutes or until cooked. In a sauté pan add 2 table spoon of olive oil or vegetable oil, then add 1 small onion chopped, add 1 clove of garlic smashed to tiny pieces, cook and stir frequently then add 3 table spoon of soy sauce, add 1 teaspoon of sugar and then add 3 table spoon of water, stir it up, then spread over cooked egg plant, serve.
Before put the sauce over the egg plant, I usually taste it to see if it right, if it to salty I add a little more sugar or water. 

Stir fry eggplant

3 medium eggplants cut to small sizes ( peel if desire) 1 onion chopped, 3 tables spoon oil. 1 cup of chicken meat cut to small cube.1 teaspoon salt, 1/2 teaspoon of dried basil, 1/3 cup of water.
Stove with high heat in a sauté pan add oil then stir chopped onion until sizzling add in chicken meat stir for 2 minutes, then add eggplants stir for a few more minutes, then add in water, cover and lower heat to medium and cook for 5 more minutes. serve.

Grilled okra

/4 cup melted butter
1/4 cup Cajun seasoning
Directions
1.Preheat an outdoor grill for high heat, and lightly oil the grate.
2.Roll the okra in the melted butter and then in the cajun seasoning. Grill the okra until charred, about 2 minutes per side.

Okra patties

1 pound okra, finely chopped
1 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup water
1 egg
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup cornmeal

Heat 1 inch of oil in a large skillet to 375 degrees F (190 degrees C).
In a large bowl, mix together the okra, onion, salt, pepper, water and egg. Combine the flour, baking powder and cornmeal; and stir that into the okra mixture.
Carefully drop spoonfuls of the okra batter into the hot oil, and fry on each side until golden, about 2 minutes per side. Remove with a slotted spoon, and drain on paper towels.

 

Okra fritters

1 large tomato, diced
1 onion, diced
6 packets instant grits
2 eggs, lightly beaten
salt and black pepper to taste
1/2 cup oil for frying, or as needed
1.Combine okra, tomato, and onion in a large bowl. Add the grits, eggs, salt, and pepper and blend together using your hands.
2.Heat oil in a cast iron skillet over medium-high heat. Form patties 2 1/2 inches in diameter, about 1/2 the size of a hamburger. Place the fritter in the pan and cook until golden brown, about five minutes. Flip with a spatula and cook until browned on the other side, about five minutes more. Remove and drain on paper towels. Serve immediately.
